Spinach Dip

I always get excited whenever I chance upon a bag of spinach at the grocery. It's not often that I find spinach in this part of the globe so I don't get to make this dip as often as I wish. Whenever it's available though, I always get a bag (or 2)and make this Cibo dip knock off!


Ingredients:
1 cup cooked spinach, drained well and coarsely chopped
1 container plain yogurt
juice of 1/2 lemon (optional)
1 medium white onion, minced
1/2 cup grated mozzarella
1/2 cup Parmesan
pepper

Procedure:
pour lemon juice onto container with yogurt. add the rest of the ingredients together. sprinkle additional Parmesan, if preferred. place in a microwave for approximately 3 minutes or until mozzarella melts and mixture becomes "bubbly".

serve immediately with crostini

note: make sure to drain spinach very well. otherwise, your dip would turn out "runny". for a thicker consistency, you may opt to strain the yogurt through a piece of cheese cloth for an hour.

  2. yummy! i tried a similar dip but i just used cream cheese instead of the yogurt with spinach :)

  3. katet, super fave ko to. i could consume this all by myself! i tried this with cream cheese too. oh wow! 10 x yummier....but also 10 x fattening! hahaha!

  4. oo nga fattening but super yummy! i actually made it as a pasta sauce then the rest i made it as a dip na :)
